I only have a small freezer and yet it's one of the most useful spaces in my kitchen. As well as leftover portions of meals and soups I've saved for another day, my freezer is packed full of bits and pieces. Food and ingredients I've stored to extend their shelf life and make cooking and healthy eating easier.

1. Tomato passata & multigrain wraps
One of my favourite 'can't be bothered' meals is home made pizza. For these I use multigrain wraps and tomato passata as the pizza "sauce". Therefore I keep a packet of wraps in the freezer and have small individual portions of passata in there as well. It only takes minutes for these to defrost.
2. Frozen vegetables
I always have a few packets of frozen vegies, including peas, in my freezer. keep these for the nights when I’m tired and don’t want to chop anything, or when there’s no fresh vegies in the fridge.
3. Hummus
I often use hummus as a spread, either on toast for breakfast or in sandwiches. However whenever I buy or make hummus I never get through the whole batch before it goes off. So now I freeze the leftovers, again in small individual serves.
An important tip, is to label your foods before putting them in the freezer. I sometimes "think" I'll remember what's in a tub, but I never do. I then end up with a mess of foods in my freezer, like the picture above. So keep a waterproof pen by the freezer and write on everything which goes inside.
