Alvin Leung’s reputation usually precedes him. He is one of Asia’s most colourful culinary personalities - also known as “the demon chef”, Leung’s tattoos and dyed streaks of hair make him appear to be more like a Cantopop star than a Chinese chef. The restaurant he helms, Bo Innovation, is known as much for its Michelin star as it is for the flamboyant style of its chef. Leung is better described as a “mad inventor in the kitchen.” If so, he is a mad inventor on a serious mission: to reinvent Chinese cuisine, strip it down to its bare essentials, and build it back into something new and familiar.

Eschewing the communal serving portions of conventional Asian cuisines, Leung’s tapas-sized dishes distills what we know and love about Chinese food into 12 or more tantalising morsels that tempt, intrigue, and above all, indulge your taste buds.
