Apple and blackberry brioches recipe
An irresistible way to start the day – toasted slices of brioche topped with caramelised apple rings and fresh blackberries, with a subtle cinnamon flavour. Made with butter and eggs, brioche has a slightly higher fat content than white bread, but it is still a healthy source of starchy carbohydrate.

Ingredients for apple and blackberry brioches
25 g butter
4 apples
1/2 teaspoon ground cinnamon
4 individual brioches
200 g fresh blackberries
1 tablespoon raw sugar
Preparation for apple and blackberry brioches
1 Preheat the grill. Line the grill pan with foil, put the butter on top and set it under the grill to melt. Meanwhile, core the apples and slice each one into 6 rings, discarding the outer edge pieces. Dip the apple rings in the melted butter to coat both sides, then lay them out in a single layer on the foil and sprinkle with the cinnamon.
2 Grill the apple rings for about 4 minutes or until they are starting to brown, turning them over once. Remove the apples on their foil from the grill pan and set aside.
3 Slice each brioche horizontally into 3 and spread out the slices in the grill pan. Toast lightly on both sides. Place 2 apple rings on top of each toasted brioche slice, add a few blackberries and sprinkle with the sugar. Put back under the grill and warm the berries for 2–3 minutes, then serve.
