 Smoothies can be a healthy meal, that works as a nutritious breakfast, snack or post-exercise boost. However they can also be a nutritional disaster. One of my local juice bars sells smoothies which sound healthy but on closer inspection are super-sized cups chockablock full of kilojoules, sugar and even sodium - not such a healthy breakfast.


Making smoothies at home is the best way to ensure your smoothie is a healthy meal, as you'll know exactly how it's made. While it takes a little more effort, I'd suggest the effort is worth it. 

I use a stick blender for making a smoothie, simply because it's less hassle than getting the full food processor and blender out the cupboard. Plus it's easier to wash up afterwards, especially as I make my smoothies in the same cup I drink from.
 
  • Use a low fat milk or yoghurt as the base
     
  • Use real fruit, instead of fruit juice
     
  • Try to be restrained with sweeteners like honey, use 1 – 2 teaspoons rather than tablespoons
     
  • Add a healthy boost by including some flax or chia seeds
     
  • If you want to make your smoothie more filling try blending in some rolled oats or walnuts

Another egg dish I regularly make for breakfast is Sophie Roberts' Skirlie. The basic recipe is an old-fashioned Scottish dish, which Sophie lightens and improves by adding plenty of extra vegetables (and not using dripping). It's quick to cook, is delicious and makes an interesting change from using oats for porridge.
 
Spring onions, herbs and greens are cooked in some olive oil. The oats are then added and toasted in the pan, before the minimum of water is used to soften the oats, so they are just cooked but retain their shape.
 
I then top this with a poached egg and it's a delicious and filling breakfast.  Skirlie with a poached egg would also make an excellent lunch, or light supper.

 Personally I'm a big fan of eggs for breakfast. In fact, if I have time, it's my favourite morning meal. Eggs are tasty, and they can be cooked in a variety of different ways, plus they are one of the few meals which actually fills me up for the morning.
 
Most of the time I have an omelette. They cook quickly and I can add in vegetables, spices, herbs and sauces - depending on what's in the fridge. A dollop of pesto is one of my favourites, although I also like whisking harissa or chermoula in with the eggs. Even better if I can stuff the final omelette with whatever herbs or greens I might have in the fridge. Although sometimes all those greens can get out of hand . . .
 
 
But I also like poached eggs on toast. I often have these with chopped fresh tomato and rocket or baby English spinach leaves, but spreading the toast with beetroot chutney is also tasty.
 
 
If we have tortillas I'll often cook an egg on the tortilla - a technique I learnt from this Smitten Kitchen recipe. This time I had the eggs with chopped capsicum, some torn up lettuce leaves, a squeeze of lime juice and some spicy tomato sauce/

The internet is a wonderful resource - so much information out there, including wonderful articles, recipes and thoughts on food.  Here are some of the recipes and resources I'm liking at the moment:
 
Steamed egg custards: I'm intrigued by this steamed egg custard from Mummy I Can Cook. Especially topped with a bit of soy sauce, some chopped green shallots, chilli and a dash of sesame oil. I plan to make this recipe very soon.

Marinating olives: A lovely way to spark up olives, by marinating in garlic, thyme and rosemary.  Perfect make-ahead finger food for a drinks or dinner party by Gourmande in the Kitchen.

Start losing weight: A great resource on the NHS website, about the steps to take when you want to lose weight.  Full of really practical advice. I particularly like the "Do Today" and "Do This Week" lists.

Pear Muffins: While we don't all have our own orchard, you can still make these delicious muffins from Tea and Cookies.  They're spiced up with ginger, cinnamon and nutmeg and sweetened with honey and pear puree, instead of sugar.  They'd make a delicious breakfast or snack.

Grilled haloumi and beetroot salad: What a cracking salad from Food and the Fabulous - grilled haloumi combined with greens and grated beetroot, then topped with toasted pumpkin seeds and a zesty lime dressing.
