Your guests will love this modern update on a holiday classic.</p><br clear=\"all\"><table width=\"100%\" border=\"0\" cellpadding=\"0\" cellspacing=\"10\" bgcolor=\"ffeae3\" class=\"LBoldGold\"><tr><td><p class=\"LNorGray\"><img src=\"../images/title_ingredients.gif\" width=\"332\" height=\"21\"><br></p><p class=\"LNorGray\"><p class=\"LNorGray\">Serves: 6</p><ul><li class=\"LNorGray\"> 2 tablespoons olive oil</li><li class=\"LNorGray\"> 3 large onions, thinly sliced</li><li class=\"LNorGray\"> 2 tablespoons water</li><li class=\"LNorGray\"> 2 tablespoons balsamic vinegar</li><li class=\"LNorGray\"> Dash of salt</li><li class=\"LNorGray\"> 2 pounds Yukon Gold or Russet potatoes, peeled and cut into large chunks</li><li class=\"LNorGray\"> 2/3 cup whole milk</li><li class=\"LNorGray\"> 2 tablespoons butter</li><li class=\"LNorGray\"> Salt and pepper to taste</li></ul></p></td></tr></table><p> </p><p>1. In large skillet, heat olive oil over medium-high heat.</p><p>2. Add onions and let stand for about 5 minutes. Cook for 15 minutes more, stirring until golden brown. Toss well.</p><p>3. Add water and balsamic vinegar, stirring well. Continue cooking until completely reduced and deep golden brown. Remove from heat and cover until ready for use.</p><p>4. While onions are cooking, place potatoes in large pot and cover with cold water with a dash of salt.</p><p>5. Bring to a boil over high heat. Reduce heat to medium and cook until fork tender, about 15 minutes.</p><p>6. Drain completely and return to pot. Mash potatoes and add milk, butter, and salt and pepper to taste.</p><p>7. Stir in caramelized onions. Keep warm until ready to serve.</p>
