What's your cooking philosophy?
Respect the ingredients. If you respect an ingredient, you take your time with it and you utilise everything that you can from it.
Do you think anyone can be a good cook?
Definitely. You don't have to be a good chef to put good food on the table. If you start with good quality ingredients and treat them simply, you end up with a beautiful product.
What are your must-haves in the kitchen?
If you have one good piece of everything – a good knife, a decent chopping board and a good pan – you can cook anything.
What's your secret to staying fit and eating all this delicious food everyday?
I love being out and about. If I have a day off, I'll never spend it watching television. I'll be out walking and hiking. I love being in the ocean – I surf three to four times a week.
What are the three ingredients you can't live without?
Dark chocolate, seafood and fresh herbs.
If there's a cook-off between you and Jamie Oliver, who will win?
Jamie and I come from different worlds in the kitchen. My training was a lot more formal than Jamie's. Jamie stopped cooking in the kitchen when he was around 22 or 23. I was trying to be diplomatic, but of course I'll beat him!
